Q&A about this recipe
Can I serve it cold?
Absolutely. Pour it over ice after blending.
What if I don't want to use or have access to coconut milk powder?
If you are making the hot chocolate mix and not using coconut milk powder, I recommend using 3 tablespoons of hot chocolate mix per 1 ยฝ cups of non-dairy milk.
How much will this make?
In this recipe, I used 6 tablespoons of the mix and 3 cups of non-dairy milk. My favorites are: unsweetened almond milk and oat milk. If you want something more luxurious, use half canned coconut milk and half filtered water.
How to make dairy free peppermint hot chocolate
Scoop 3 tablespoons of the mix into two large mugs. 6 tablespoons total for two drinks.
Add milk and peppermint extract into a medium saucepan. Then, heat over medium low until it comes to a simmer.
If you are using coconut milk powder in the mix, simply add 3 cups boiling water to the cup and whisk.
Next, pour mixture into the mug and give everything a really nice stir or whisk. I prefer to put everything into the blender so it gets even frothier.
Top off with homemade whipped cream if you'd like or serve plain. You can pour this over ice and enjoy it cold.

I've been making this all month and enjoying it in my morning coffee! I leave out the cinnamon and chili for the peppermint version, mix up a batch and store it in the fridge in a jar. Every morning I add some to my coffee! Festive and delicious!
