What makes this acai bowl recipe so great?
I will be the first to tell you how big a fan I am of acai bowls. The downside though, is that they’re usually laden with a few things that I do not want to put in my body.
In addition, they’re completely full of carbohydrates and blood sugar-spiking ingredients. What I have done is completely restructured the acai bowl and made it paleo and vegan friendly.
I have also added some essential, nutrient dense ingredients that will turn this sugary breakfast bomb bowl into a worthwhile & nutritious addition to your breakfast game.
Feel free to simply leave the collagen peptides out if you'd like this recipe to be completely vegan.
I was inspired to make these paleo and vegan acai bowls by my friend Rachel over at Bakerita. She has been making bright-colored and delicious-looking acai bowls nearly every morning it seems.
Luckily, I get to tantalize myself and drool over her acai bowls on Instagram all the dang time. Thanks so much Rachel.
I knew I wanted to take some photo direction from her but come up with my own rendition of one of my favorite breakfasts. Everything tastes better when being eaten out of a big bowl with a spoon, right?
What's inside this vegan acai bowl?
I decided it was absolutely necessary to include fat, protein & fiber into these. Why?
Well, one of my favorite go-to resources for anything and everything smoothie related is Kelly LeVeque of Be Well by Kelly. Kelly is a certified holistic nutritionist and health coach here in Southern California.

How to make a vegan acai bowl
In the pitcher of a high-speed blender, add all of the ingredients. I prefer to use my Vitamix and the tamper attachment.
*If you do not have access to a high-speed blender, I'd recommend being patient and using a little more liquid!*
Blend on medium-high for 1 minute. If you're using a Vitamix, be sure to use the tamper to make sure everything gets blended well.
Next, pour into a bowl and top off with your favorite toppings.
I like to use fresh berries, bee pollen, cacao nibs and banana slices. Here are some other topping ideas:
- Unsweetened coconut flakes
- Extra nut butter: cashew, almond, peanut, etc.
- Pure honey
- Goji berries
- Flax seeds, hemp seeds or chia seeds
- Cinnamon or cacao powder

Ingredients
The Bowl
- 1 packet organic unsweetened acai
- 1 ยผ cups frozen mixed berries
- 1 small frozen banana
- ยฝ cup unsweetened coconut or almond milk
- 1 heaping tablespoon cashew butter
- 2 tablespoons hemp seeds or chia seeds
- 2 scoops collagen peptides omit for vegan
- 1 tablespoon coconut oil
Toppings
- bee pollen
- cacao nibs
- fresh fruit
Instructions

Hi there. That's a good question, but I unfortunately don't provide that information, as I focus on using real food ingredients. I know you can plug in the recipe very easily to an app/website like MyFitnessPal though. Could you try that? It's SOOOO delicious!
