Paleo & Vegan Acai Bowl

This recipe for a paleo and vegan acai bowl is packed with all kinds of nutrient dense ingredients. It will be loved by the whole family and is the perfect balance of tart and sweet. It's perfect for breakfast, as a snack and is completely dairy free and refined sugar free!

What makes this acai bowl recipe so great?

I will be the first to tell you how big a fan I am of acai bowls. The downside though, is that they’re usually laden with a few things that I do not want to put in my body.

In addition, they’re completely full of carbohydrates and blood sugar-spiking ingredients. What I have done is completely restructured the acai bowl and made it paleo and vegan friendly.

I have also added some essential, nutrient dense ingredients that will turn this sugary breakfast bomb bowl into a worthwhile & nutritious addition to your breakfast game.

Feel free to simply leave the collagen peptides out if you'd like this recipe to be completely vegan.

I was inspired to make these paleo and vegan acai bowls by my friend Rachel over at Bakerita. She has been making bright-colored and delicious-looking acai bowls nearly every morning it seems.

Luckily, I get to tantalize myself and drool over her acai bowls on Instagram all the dang time. Thanks so much Rachel.

I knew I wanted to take some photo direction from her but come up with my own rendition of one of my favorite breakfasts. Everything tastes better when being eaten out of a big bowl with a spoon, right?

What's inside this vegan acai bowl?

I decided it was absolutely necessary to include fat, protein & fiber into these. Why?

Well, one of my favorite go-to resources for anything and everything smoothie related is Kelly LeVeque of Be Well by Kelly. Kelly is a certified holistic nutritionist and health coach here in Southern California.

She is the creator of the Be Well Smoothie. Do I have your attention?

A Be Well Smoothie is a formula she created to help you develop a blood sugar balancing, meal replacement shake/bowl with enough protein, fat and fiber to keep you full. Good deal, right?

These smoothie bowls are completely balanced with enough fat, fiber and protein to keep you fill past a measly 2-hour mark. You can expect to be completely satiated after having one!

If you want to save a couple dollars and start making a vegan acai bowl at home, look no further. This bowl trumps all of the bowls I’ve ever tried out and about.

That’s a big deal. I’ve probably visited over 30+ acai joints here in Southern California- they’re everywhere.

When something has all of the nutrients and tastes this delicious, there’s absolutely no reason not to make it… yum!

How to make a vegan acai bowl

In the pitcher of a high-speed blender, add all of the ingredients. I prefer to use my Vitamix and the tamper attachment.

*If you do not have access to a high-speed blender, I'd recommend being patient and using a little more liquid!*

Blend on medium-high for 1 minute. If you're using a Vitamix, be sure to use the tamper to make sure everything gets blended well.

Next, pour into a bowl and top off with your favorite toppings.

I like to use fresh berries, bee pollen, cacao nibs and banana slices. Here are some other topping ideas:

  • Unsweetened coconut flakes
  • Extra nut butter: cashew, almond, peanut, etc.
  • Pure honey
  • Goji berries
  • Flax seeds, hemp seeds or chia seeds
  • Cinnamon or cacao powder

Ingredients
  

The Bowl

  • 1 packet organic unsweetened acai
  • 1 ¼ cups frozen mixed berries
  • 1 small frozen banana
  • ½ cup unsweetened coconut or almond milk
  • 1 heaping tablespoon cashew butter
  • 2 tablespoons hemp seeds or chia seeds
  • 2 scoops collagen peptides omit for vegan
  • 1 tablespoon coconut oil

Toppings

  • bee pollen
  • cacao nibs
  • fresh fruit

Instructions
 

  • In the pitcher of a high-speed blender, add all of the ingredients.
  • Blend on medium-high for 1 minute. If you're using a Vitamix blender, be sure to use the tamper to make sure everything gets blended well.
  • Pour into a bowl and top off with your favorite toppings.

You can make this recipe vegan by removing the collagen peptides!

    We just discovered this recipe. My daughter and I make it once a week and we save a small bowl for my son to have after school. We change up the frozen fruits that we use to change up the flavor!5 stars

      Hi there. That's a good question, but I unfortunately don't provide that information, as I focus on using real food ingredients. I know you can plug in the recipe very easily to an app/website like MyFitnessPal though. Could you try that? It's SOOOO delicious!

    I made this today and it was soooooooo good! Many acai bowls are just too sweet for me, so I knew that I would like this better but I was surprised that my kids also liked it better. Win/win!

      I'm not. I'm using the frozen acai packets from Trader Joe's. Sambazon also makes them, and I know they are sold at a few different stores: https://www.sambazon.com/find-us/ -- They are the superfruit packs
