Air Fryer Zucchini Chips

Make these wonderful air fryer zucchini chips recipe for you and your whole family to enjoy. They are lightly coated in a mixture of almond flour and fabulous spices, and you are going to just love the honey mustard aioli dip. These zucchini chips are gluten free, dairy free, low carb and paleo.

Can we take a second and just look at the crisp on these bad boys?? I have been wanting to take the plunge and get myself an air fryer for quite some time now.

When Amazon Prime day was upon us, I knew that was my moment. The Ninja Air Fryer I ended up purchasing was about 30% off, so I went for it.

So far, we've made these air fryer zucchini chips and French fries about 300 times. Because zucchini is so dang versatile, I knew that trying my hand at zucchini chips in the air fryer was really the first recipe I wanted to attempt making.

I think next up may be something like buffalo cauliflower tots... how does that sound?

I'll update you. Obviously. But back to these zucchini chips...

The breading ingredients are really quite simple and can be found at your local grocery store or market. I didn't want to use anything obscure because I wanted this recipe to be approachable and simple, yet full of flavor.

Oh, and that honey mustard aioli? Seriously fabulous. The base for it is my creamy, dreamy homemade paleo mayonnaise, and it makes for a really delectable end result.

If you are okay with having dairy, I would highly recommend checking out these Oven Fried Zucchini Sticks. They are made with loads of parmesan cheese, and they are absolutely delicious!

Here is what you will need to make these zucchini chips:

Zucchinis (quite obviously, huh?), almond flour, arrowroot flour, eggs, spices & herbs, paleo mayo, dijon mustard, stone ground mustard, and honey.

All of the spices and herbs in the recipe can also be found at your local market. You won't be heading to more than one store, that's for sure.

Sounds pretty painless, yeah? That's the goal 😉 just wait until you try them, too!

Troubleshooting: Questions & Answers

How many people will this serve?

This will be a nice snack for 2-3 people. You will have plenty of leftover honey mustard aioli, so be sure to store that away for all of the things you want to have a dipping sauce for.

Do I need to line the air fryer tray with a parchment circle?

Yes. I have tried making this recipe and skipping this step. Several zucchini chips ended up getting stuck and the breading peeled off. So sad. Don't skip this step!

What size air fryer do I need to use?

4-Quart Ninja Air FryerI used the . If you use a smaller one, you'll have to work in several batches, which can be a bit of a time suck. If you are in the market for an air fryer, I'd recommend getting one at least this size if not larger.

How thick should the zucchini be cut?

Cut the rounds about ¼" thick. If you cut them too thin, they'll get way too crispy and may burn. Too thick, and they won't crisp up at all. Be mindful when you are cutting and either use a mandolin to ensure even thickness throughout or do very diligent knife work.

Can I bake these instead?

Absolutely. If you don't own an air fryer and want to throw these in the oven, go for it. You will want to bake them at 425 degrees Fahrenheit for 20-25 minutes, checking on them after about 15 minutes.

Can I substitute any of the flours in the breading?

I would not recommend it. Arrowroot has a very specific purpose in this recipe, and it cannot be substituted with anything that will produce the same result.

Almond flour is one of the best grain free flours for breading (in my humble opinion), so I'd recommend sticking with that recommendation as well.

How to make air fryer zucchini chips

Trim the ends off of the zucchini, and cut into thin rounds. Place on a plate lined with a clean towel and sprinkle with kosher salt. Lay another towel on top and a heavy pot or pan on top of it. Allow to sit for 20 minutes to draw extra moisture out.

Combine breading ingredients together well in a bowl (except for the eggs and water.)

Beat eggs with water well in a separate bowl until nice and frothy.

Dip zucchini slices into egg and immediately dip into the breading mixture. Set on parchment lined air fryer tray.

Repeat until air fryer tray is full, giving them a little bit of space to breathe (you will probably need to work in two batches!) Set air fryer to 350 degrees Fahrenheit for 10 minutes.

Remove tray and carefully flip zucchini slices. Cook for another 3 minutes. Repeat process with second batch of zucchini. Serve warm.

Combine the ingredients for the honey mustard aioli together in a small bowl. This will keep in an airtight container in the refrigerator for up to one week.

Ingredients
  

Zucchini Chips

Honey Mustard Aioli

  • ½ cup Homemade Paleo Mayonnaise
  • 2 tablespoons Dijon mustard
  • ½ tablespoon stone ground mustard
  • 1 ½ tablespoons pure honey
  • ½ teaspoon garlic powder

Instructions

Notes

The step of pressing the moisture out of the zucchini chips between towels really improves the "stickability" of the breading mixture. I do not recommend skipping this step altogether.
