This is the first blondie recipe that I have ever created. Let me tell you, it is the first of many variations and flavor combinations.
As soon as I found out what a blondie was, I knew I wanted to make my own spin on it. I decided to use a mixture of cashews and brown butter, resulting in a flavor profile words just cannot bring justice to.
After baking, they were more of a light brown color rather than blonde. That’s when my clever idea to call them “dirty blondies” came to mind.
The toffee flavors from the ghee really come through when biting into one of these blondies. After people try these dirty blondies, the first sentence that usually comes out of their mouth is: “I cannot believe these are healthy.”
Oh, neither can I, which is why I tend to finish off the entire batch by myself.

They will be under your spell forever. Just watch it happen!
In fact, I brought a few of these to my acupuncturist and facialist (they are husband and wife, ha) and she text me the next afternoon saying: "Holy shit these are the most delicious thing either of us have ever eaten."

Can I substitute cashews for almonds in these paleo blondies?
You can, but I don't particularly recommend it. The recipe will still turn out, but the cashews lend a very particular taste, texture and straight buttery yumminess to this recipe.
I've had paleo chocolate chip blondies made with almond flour before and while they are certainly delicious, they are not something I make triple batches up of and keep to always have on hand in my freezer.
I brought these blondies to my best friend's daughter's 2nd birthday party last week, and she insisted on keeping them inside her house and not bringing them to the park where the party was being held.
That way, she would have access to 3 or 4 if she wanted them instead of just one. I didn't hold it against her.
How is the dark chocolate so melty and gooey inside the blondies?

Are you wondering how I get the chocolate so melty and gooey? The darker the chocolate you use, the more of a chance it will get gooey like this.
If you end up using something like an 85% chocolate, it will become extremely melty. I usually stick with about a 72-80% for this reason.
If you have the ability to gain access to cashew butter and raw cashews, please don't make any substitutions here. The cashews really contribute to the best flavor and texture in these chocolate chip blondies.

5 Minute Chocolate Chip Blondies
Ingredients
- 1 cup raw cashews
- ½ cup cashew butter
- ¼ cup ghee or coconut oil
- ¾ cup coconut sugar
- 1 large egg
- 1 tablespoon pure vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon kosher salt
- 4 ounces dark chocolate chopped into chunks
- flaked sea salt for topping
Instructions
- Preheat the oven to 350°F (177°C). Lightly coat an 8x8” square baking pan with extra butter/oil and line with parchment paper (SEE NOTES!) Set aside.
- Pulse raw cashews in a food processor, a few seconds at a time, until they resemble a coarse flour. You don’t want any visible chunks of cashews. This should take about 1 minute.
- Add the cashew butter, ghee, coconut sugar, egg and vanilla extract and pulse until smooth. Stir in the baking soda and salt. Stir in the chocolate chunks.
- Spread evenly in the prepared baking pan. You can use an offset spatula to make this process easier.
- Bake at 350°F (177°C) for 18-22 minutes, or until lightly browned.
- Let cool in the pan completely for at least 30 minutes before lifting the blondies out of the pan and cutting into 12 or 16 squares. Sprinkle with flaked sea salt and enjoy.

I used banana instead of an egg, also my cashews were damp from soaking so that may have contributed to them not setting up. Still, this batter made an incredibly delicious pudding! I look forward to trying again with the correct ingredients. I also used brown instead of clarified butter.

Yummy! Yummy! Yummy! Made them exactly a week ago for my birthday and they didn’t last for more than 3 days. So, I made them again. Again, yummy! This time I cooked them the full time listed (22 min) and they turned out beautifully. Make these!!!!!

Hoky wow these are amazing. I was skeptical once I mixed everything up, because the ghee was sorta separating, and I expected an oily disaster. I read and re-read the ingredient list a million times; could not believe there was no almond flour, coconut flour, etc. They. Are. Phenomenal. Seriously so good I can't believe it. And made even better by the ridiculously quick prep time.

Omg these are to die for! I made my own cashew butter, which is super easy and followed the rest of directions exactly and they are so decadent and delicious. Seriously I never thought something without dairy and gluten could possibly be this indulgent. Do yourself a favor and try these!
