Watermelon Gin Cocktail

This watermelon gin cocktail is incredibly refreshing, well balanced and will definitely improve your mood after having a few sips. It's made with fresh watermelon juice, mint leaves, cucumber, and a quick simple syrup. The cocktail is gluten free, dairy free, and will turn anyone on to gin!

Ingredients

  • 4 cups fresh watermelon cubed
  • 16 fresh mint leaves
  • 8 fresh cucumber slices about 1/2" thick
  • 1 1/2 ounces simple syrup
  • 3 ounces gin see notes

Instructions

  • Prepare the watermelon juice. Add watermelon chunks into a blender pitcher, and blend on high for about 30 seconds until smooth throughout. Pour over a mesh sieve into a large glass. Set aside.
  • Add mint leaves, cucumber, and simple syrup to a cocktail shaker. Using a muddler, muddle them all together very well. Add gin, 1 cup of watermelon juice, and about 6 ounces of ice cubes (large handful.) Stir well.
  • Add a handful of ice cubes to two cocktail glasses. Pour the cocktail evenly amongst the two glasses. Garnish with fresh cucumber slices and mint sprigs. 

Notes

  • I highly recommend using Roku gin. It is my absolute favorite, and it is the gin that made me a fan. It's sourced from Japan and is so, so tasty.
