This recipe for a paleo and vegan acai bowl is packed with all kinds of nutrient dense ingredients. It will be loved by the whole family and is the perfect balance of tart and sweet. It's perfect for breakfast, as a snack and is completely dairy free and refined sugar free!

Ingredients

The Bowl

  • 1 packet organic unsweetened acai
  • 1 1/4 cups frozen mixed berries
  • 1 small frozen banana
  • 1/2 cup unsweetened coconut or almond milk
  • 1 heaping tablespoon cashew butter
  • 2 tablespoons hemp seeds or chia seeds
  • 2 scoops collagen peptides omit for vegan
  • 1 tablespoon coconut oil

Toppings

Instructions

  • In the pitcher of a high-speed blender, add all of the ingredients.
  • Blend on medium-high for 1 minute. If you're using a Vitamix blender, be sure to use the tamper to make sure everything gets blended well.
  • Pour into a bowl and top off with your favorite toppings.

Notes

You can make this recipe vegan by removing the collagen peptides!
