- 4 cups fresh watermelon cubed
- 16 fresh mint leaves
- 8 fresh cucumber slices about 1/2" thick
- 1 1/2 ounces simple syrup
- 3 ounces gin see notes
Prepare the watermelon juice. Add watermelon chunks into a blender pitcher, and blend on high for about 30 seconds until smooth throughout. Pour over a mesh sieve into a large glass. Set aside.
Add mint leaves, cucumber, and simple syrup to a cocktail shaker. Using a muddler, muddle them all together very well. Add gin, 1 cup of watermelon juice, and about 6 ounces of ice cubes (large handful.) Stir well.
Add a handful of ice cubes to two cocktail glasses. Pour the cocktail evenly amongst the two glasses. Garnish with fresh cucumber slices and mint sprigs.
- I highly recommend using Roku gin. It is my absolute favorite, and it is the gin that made me a fan. It's sourced from Japan and is so, so tasty.
