Paleo Brussels Sprout Slaw

This paleo brussels sprouts slaw recipe is the perfect addition to any meal! It is full of Vitamin C and fiber, thanks to the brussels sprouts, has plenty of potassium from the cabbage, and the hemp seeds bring a unique blend of omega-3's and 6's to the table. Healthy, vibrant and delicious!

Ingredients

Slaw

  • 2 cups brussels sprouts chopped thinly
  • 1/2 red cabbage shaved
  • 6 strips bacon diced
  • 1/2 large red onion finely diced
  • 1/4 cup hemp seeds

Dressing

  • 1/2 cup Homemade Paleo Mayonnaise
  • 3 tablespoons Nature's Intent apple cider vinegar
  • 3 tablespoons honey or 1 pitted & soaked date (see notes)
  • black pepper to taste

Instructions

  • Combine brussels sprouts, cabbage, bacon, onion & hemp seeds in a large bowl.
  • In another small bowl, whisk the dressing ingredients together until thoroughly combined.
  • Toss slaw with the dressing and serve.

Notes

  • To make this recipe 100% Whole30 compliant, simply swap out the honey for one pitted date. Soak it in boiling water for 15 minutes and drain. Blend the rest of the dressing ingredients and the date together until well combined.
