In a small mixing bowl, add instant coffee and coconut sugar. Pour in 3 tablespoons of boiling water and stir everything together.
Using either a manual whisk, handheld frother or electric mixer, whisk everything together for 2-3 minutes until the color turns a golden brown and the mixture thickens up quite a bit.
You can alternatively do this in the bowl of a stand mixer or in a medium bowl with an electric mixer.
If you'd like the coffee mixture to quickly melt into the milk, stop whisking/whipping once you see trails in the coffee mixture.
If you'd like a thicker coffee, only add 2 tablespoons of hot water and whisk/mix for an extra 1-2 minutes.
Fill a glass with a handful of ice cubes. Pour in 1/2 cup of non-dairy milk.
Add whipped coffee on top and give everything a nice and aggressive stir until well incorporated.
