• Avocado Oil
• Chicken Thighs
• Kosher Salt
• Bay Leaf
• Italian Seasoning
• Black Pepper
• White Rice
• Chicken Broth
Press the "sauté" setting on your Instant Pot and let it heat up.
Add oil, shallot, carrots, and garlic. Stir, add the seasoned chicken chunks, and saute.
When the chicken starts to turn white, add bay leaf, thyme sprigs, and spices. And cook.
Add rice and liquids into the instant pot. Stir
well, close the lid, and pressure cook.
Open the lid carefully and stir. Add fresh lemon juice and taste for additional salt and pepper. Serve with chopped parsley.
