How adorable is this Allergen Friendly Pesto Pizza? I love making everything in mini form, so naturally, I turned the pizza dough into four 1-serving pizzas instead. When I was coming up with the recipe, I knew I wanted to top them off with a winning set of surprising ingredients. My first though was, “let’s throw some ahi tuna on these cutie pies!” Seriously, those are the words that I repeated to myself in my head.

Hey, did you know that “they” say those people who speak to themselves are extremely intelligent? I heard this, okay?

After coming up with the ahi tuna idea, I scavenged through my refrigerator for the rest of the toppings, and I came out with some real all-stars… but let me tell you, it wasn’t easy. Why? Well…

Boy, has it been a tough couple of weeks. My husband and I both caught pretty bad colds (with accompanying coughs) 2 1/2 weeks ago. We were both at the same event and woke up the next morning feeling like absolute poop. Now, I always pride myself on my ability to avoid getting sick… always. I don’t think I’ve had a cold in nearly five years, so it seems like I was well overdue. But boy did it hit me hard.

As soon as my cough started to clear up, I’d become extremely congested. I was going through a box of tissues a day. Then, my nasal passage would finally heal, and my cough would come back. This rotation has been happening over and over for almost three weeks. Yuck…

It’s put a serious damper on my work schedule, but I’m trying to power through…

PERSONAL PIZZAS

The 4 pizzas I made in this recipe are about one serving each. There’s nothing better than have your own personal pizza… am I right?

If you’re very hungry, two will absolutely fill you up. My husband has an appetite like you wouldn’t believe, so he finished off two in one sitting, but one was plenty for me.

I love the idea of putting fish on pizza now. I had only ever really had sardines on pizza… and boy do I love them. After putting ahi tuna on these Allergen Friendly Pesto Pizzas, I know it’s just the tip of the iceberg. I feel like I need to start making poke pizzas and some with roasted salmon, too. Doesn’t that sound absolutely delicious? Obviously, you should be keeping your eyes peeled 😉

Best Allergen Friendly Pesto Pizza

Allergen Friendly Pesto Pizza that will really satisfy all your cravings. This delicious, gluten free pizza is topped off with homemade pesto, ahi tuna, delicious veggies & goat cheese. Just trust me on this winning combination!
Ingredients
DOUGH
PESTO
  • 2 cups fresh basil leaves packed
  • 4 garlic cloves chopped
  • 1/2 cup pine nuts lightly toasted
  • 1 1/2 teaspoons freshly squeezed lemon juice
  • 2/3 cup avocado oil
  • sea salt to taste
TOPPINGS
  • 1/3 cup pesto enough to cover the dough
  • 1 pound sashimi grade wild ahi tuna cut into small cubes, brushed lightly with oil & sprinkled with salt and pepper
  • 1/2 cup pineapple finely diced
  • 1/4 cup canned artichokes diced
  • 1/4 cup fermented spicy pickles any form of fermented vegetable will work well!
  • fresh basil for garnish
  • goat cheese crumbles for garnish (omit for non-dairy)
  • red pepper flakes for garnish
  • black sesame seeds for garnish

Instructions
PESTO
  1. Place the basil, garlic, pine nuts and lemon juice in a high speed blender or food processor and process until well combined.
  2. While the motor is running, gradually add in the oil and process until thoroughly combined. Season to taste with sea salt. Set to the side while you prepare the dough.
PIZZA
  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper... set aside. Adjust the oven rack to the middle position.
  2. In a large bowl, combine pizza dough mix, oil, and gradually add approximately 1 1/4 cups cold water in a bowl until well blended and dough forms.
  3. Once the dough forms, use hands to knead into a smooth ball, about 1-2 minutes. Use more or less water to create a desired dough consistency, if necessary. You can make one very large pizza or create 4 small ones like I did. I just used a small cereal bowl to cut out my smaller rounds. Transfer the pizza crusts to lined baking sheet.
  4. Brush with oil, sprinkle with salt and using a fork, make indentation holes throughout before baking 8-10 minutes. Remove from oven and add desired amounts of toppings. Bake for a further 10-12 minutes or until cheese (or your favorite non-dairy alternative) melts. For an even crispier crust, place the crust directly on the oven rack or under the broiler!

    This looks amazing! I’m really looking forward to seeing how this crust comes out. The grapes really intrigue me too. I keep buying fresh basil plants and then killing them. I have the worst black thumb haha.
