It’s no secret I am a woman who adores waffling. Almost every weekend, I am up early heating up the waffle iron, trying to surprise my family with a new waffle flavor. The reason I love waffles so much is because they are so versatile…

You can add chocolate chips, cocoa powder, fruit, nuts, really whatever you’d like into the batter to create something new and exciting with them.

Since creating this recipe for Super Easy Paleo Waffles just about two years ago, I have had multiple requests from many different family members and friends to remake them… over and over again. They are without a doubt a huge hit at my house!

STACKS ON DECK

If you prefer your Super Easy Paleo Waffles crispy, you will need to toast these for a minute or two after they are done.

The texture is firm, but they do not crisp up.

I prefer eating them the way they are because it’s almost like a firm sandwich bread, yet they aren’t dry at all. They are perfect for cutting into quadrants and making sandwiches or stacks out of!

These waffles can be made into a sweet or savory dish. You can slather some grassfed ghee or butter on top and pour on some maple syrup OR use some homemade preserves.

I almost always use syrup with my waffles, but with ghee and jam, you don’t need to! Fresh fruit is obviously super amazing on top… and don’t be shy about making some whipped cream, too!

I’ve actually just eaten these waffles plain as a snack. They don’t need to be a certified breakfast item, trust me. My greatest advice to you would be to go out and get a waffle iron QUICKLY if you don’t already have one.

I am not one to overload my kitchen with specific gadgets like these…

*However, it is one of the best investments I have made, and I have so much fun using it every single weekend.*

ITALIA, HERE WE COME!

I can’t remember if I’ve shared this already, but…

Tim and I are heading to Italy for fifteen days in September. We are so beyond flipping excited, it is unreal.

We just finished up a rough itinerary, where we booked all of our train tickets and accommodations and boy, was that a long time coming!

It was a bit stressful for us to sit down and do this. We are both very ‘lax when traveling and tend to get a bit stir crazy… quite easily, mind you.

The thought of having concrete plans, where we are unable to change our train tickets and/or our accommodations made us feel a little uneasy. BUT IT HAD TO BE DONE.

We are staying at a good combination of Airbnb’s, farm-stays, hotels and regular bed and breakfasts. We spent a good 3 days doing so much research and it definitely has paid off.

I will absolutely be documenting our trip… I’m bringing along my camera and travel lens and probably will not be able to resist jumping onto Instagram stories. Typical.

In between now and September, we’re also going to hopefully be heading to either Portland or Napa/San Francisco for my birthday at the tail end of July.

John Mayer just so happens to be playing a show in Mountain View on my birthday weekend, and I’d really love to make an appearance.

Okay, okay, so putting all of my travel plans aside- let’s get back to these real deal Super Easy Paleo Waffles…

You should accept my challenge, but I can pretty much guarantee that you will not succeed. They are so dang tasty… and convenient. Like I said, I love keeping a stash in the freezer for easy snacking or a grab & go breakfast option!

You may need or more water, depending on how fatty and thick your coconut milk is. You will want your batter to be thick but pourable!

You may need or more water, depending on how fatty and thick your coconut milk is. You will want your batter to be thick but pourable!

Ingredients
Instructions
  1. In a large bowl, mix together all of the dry ingredients with a fork or whisk. Set aside.
  2. In a medium bowl, whisk the eggs. Combine the rest of the wet ingredients into the same bowl (except for the water.)
  3. Pour the wet ingredients into the dry, and stir them together well. At this point, your mixture should be pretty thick! And that's fine! Add in 1/4 cup of water at a time and keep stirring. Your mixture will be thick but roll with it for now.
  4. Heat up your waffle iron for a few minutes, then brush / spray on a layer of oil onto both the top and bottom of the griddle.
  5. Pour enough of the mixture into the iron to barely cover the bottom. You do not want to add too much because your iron will begin to overflow!
  6. Depending on the size of your waffle iron, this should make about 6 large waffles.
  7. Top with your favorite toppings and serve warm.
