Warning: I have been on a Holiday baking SPREE. Seriously, have I even made anything aside from my dessert in the last 6 weeks? It probably doesn’t seem like it, but I can assure you I’m not downing all of these treats by myself… hehehe.

It’s bittersweet that January is near. I always get excited for the New Year! Although I don’t normally partake in writing any of my resolutions down, I’m changing things up a bit.

I’m completely dedicated to bringing you consistent, fresh new content in 2017. I haven’t quite decided whether I’m going to be focusing more on video content, yet. IT IS an idea I’ve been entertaining for quite some time. What I can promise you though, is that:

I have absolutely hit some road bumps…! Like I said though, I’m writing all of my resolutions down for 2017. I refuse to let myself down. Bonus- you get to reap the benefits!

So I originally created this Paleo Blondies recipe years ago. I made it for my first cookbook and even implemented it as the crust for my Paleo Caramel Pecan Cheesecake Bars. I love how versatile it is, and there aren’t a long list of ingredients you need to get a hold of!

I usually make these blondies with a homemade raw cashew flour and cashew butter. However, I’ve teamed up with my friends over at Amoretti and decided to use their pecan flour in place of the cashew flour.

I wasn’t sure it was possible for me to like these blondies any more than I already do… but it happened. Thanks to the pecan flour and Amoretti… of course. Even my best friend and sister mentioned that these blondies tasted smidgen better than my usual recipe.

Try making these 5 Minute Paleo Blondies next time you’re in a pinch and want to make dessert. They are so quick to make and I guarantee they’ll be well-received by everyone. I think I’ve served these blondies to over 100 people, and I have never seen a sad face.

They’re nutty, lightly sweetened and all kinds of fabulous. Be sure to give them a try before you become too serious about those New Years resolutions.

Instructions
  1. Preheat the oven to 350 degrees Fahrenheit. Lightly coat an 8-inch square baking pan and line with parchment paper. Make sure it’s long enough to line the entire bottom of the pan and have a few inches of overhang on either side. In general, when removing baked goods from the pan, use the overhanging parchment paper as handles to lift them straight up and out.
  2. Add the pecan flour to the bowl of a food processor. Add the cashew butter, brown butter, coconut sugar, egg and vanilla. Pulse until smooth. Pulse in the baking soda and salt.
  3. Spread evenly in the prepared baking pan. You can use an offset spatula to make this process easier. Bake for 18-22 minutes, or until lightly browned.
  4. Let cool in the pan completely for at least 30 minutes before lifting the blondies out of the pan and cutting into 9-12 squares.

    Hi, just wondering if the nutritional values are for the entire recipe? Also, do you use a low carb white chocolate chip product?

      Hi Lisa. Sorry about that… the nutritional information was slightly off. I have corrected it, and it is per blondie.
