It’s no secret at this point that I absolutely love spending time in the kitchen. I have a ton of fun developing recipes, making a huge mess, doing dishes, you name it. The kitchen is my happy place – plain and simple. Growing up, I didn’t spend very much time in the kitchen, as I could always count on both my mom and grandma to have breakfast, lunch and dinner prepared for me.
It was so great… until I ventured out of the house and began living on my own at the ripe age of 18. At the time, I was working full time at a Starbucks coffee shop in Oceanside, CA. I wasn’t into health or wellness but I sure loved to down plenty of caffeine and pastries.
I have fond memories of scarfing down a breakfast sandwich from Starbucks, following it up with some Little Caesar’s for lunch & doing who knows what for dinner near the beach. Sometimes, I think we’d just eat more leftovers. It wasn’t until right before I turned 22 that I got into actually cooking my own food. When I first started eating mindfully and food blogging (just a few short years later), I was still always looking for shortcuts.
I was in college full-time and working at Trader Joe’s, so I didn’t have a ton of free time to spend in the kitchen. This was when I had just met my *now husband* Tim. He was just as bad as me in the kitchen, except he didn’t even care what the food tasted like.
When I first started cooking, I wanted to create healthy and DELICIOUS-tasting meals. Tim was really into healthy eating, but boy were his dishes disgusting. I can specifically remember a time that I wandered into our break room at Trader Joe’s (where we met) and walked into a cloud of the worst smelling, fishiness ever.
I was like, “WHAT THE HECK IS GOING ON BACK HERE?” Tim had grabbed a bag of frozen spinach from the freezer section, some cod & a carton of eggs. He threw everything together in a big bowl and into the microwave it went.
ARE YOU KIDDING ME? I absolutely love telling this story because fast forward another six years, and we are here… somewhere really magical and delicious smelling.
When Green Chef initially reached out to me about a potential partnership, I was a tad bit skeptical. I have tried A LOT of different meal delivery companies, and here is what I have found:
- The companies that have already prepared meals being delivered to you have a hard time with quality control… it’s not easy to make up something fantastic and eat it as “leftovers” (for lack of a better term) several days later and make sure the taste and quality remains in tact
- It gets expensive. Who has an extra $15 laying around per meal, per day?
- There is a true lack of variety within the menu options
I was pleasantly surprised after taking a look at Green Chef and perusing through their menu options though! They have something for everyone. There is a two-person plan and a family plan, too. What kind of recipe ideas have they come up with? Well, under the paleo plan, I was able to get my hands on:
- Five Spice Chicken with bun bo xao dressing, rutabaga slaw, cashews & herbs
- Steak ‘N’ Eggs with thyme seasoned sweet potatoes and brussels sprout hash
- Green Curry Cod with bell pepper, roasted bok choy, cashews & coconut
Seriously? How amazing and creative do these recipes/dishes sound?! My favorite of the 3 was the Five Spice Chicken, which really surprised me. I am NOT a fan of chicken breast, and I find that I only like it when I sous vide it. Otherwise, it tends to overcook and dry out no matter how careful and diligent I am. None of this nonsense happened when I was making the Five Spice Chicken. I love how specific the recipe cards with instructions are. They also include photos for each instruction step, which was super helpful!
You can’t mix up your ingredients between the 3 recipes either, thanks to the color-coding on the outside of each ingredient. Seriously, they are checking off all of the boxes here.

Since I spend nearly every day recipe developing, it’s such a relief to get to turn to Green Chef for a reliable, healthy and absolutely tasty meal.
I will have to use Green Chef again as we get ready to gear up for the holidays. It’s going to be super busy over here, and I know that spending less time worrying about what’s for lunch / dinner is going to be a game changer for me.
