I hardly ever make smoothies anymore. I’ve been so swamped trying to finish this Paleo Baking Book, and when I do use my blender, it’s primarily for coffee let’s face it. However, this Berry Tropical Smoothie Bowl has me running round in circles and jumping up and down, over and over again. I have been high-fiving myself since finding a way to use all of this extra passion fruit I have. What better way than this Berry Tropical Smoothie Bowl? Get it? Berry Tropical? — Like “very tropical”! Ha. Over the weekend, I made a trip to Los Angeles with my husband and younger sister to visit my dear friend Nicole. She is moving into a studio in Burbank and wanted our help hanging up wallpaper and doing some decorating. To no surprise, we spent the entire day walking around Santa Monica, shopping and stuffing our faces instead. Now, Nicole and I really really get along. She was one of the bridesmaids at my wedding, and I absolutely adore her fun-loving nature and never-ending stories. She is THE BEST, seriously.
One thing we do not have in common is our diets. She is vegan, and I hardly make any vegan recipes. Nicole is up every morning making loaded up smoothies. Why don’t I make more vegan recipes? It’s not because I don’t respect and appreciate their lifestyle, but it just doesn’t line up with a lot of the ingredients I am most comfortable in using. I wanted to dedicate this recipe to Nicole since this recipe can be made 100% vegan by omitting the collagen peptides. The collagen really thickens the bowl up nicely, but it can be replaced with a handful of ice cubes…
I KNOW passion fruit is only in season for a brief period of time. So, once it is off the shelves and has disappeared from our farmers markets, I would recommend substituting mango or pineapple for the passion fruit. It’s hard to mimic that awesome texture, but we will just have to make do. Summer is over I realize, but it is still so darn hot here in Southern California. I will be making as many smoothie bowls as possible until it starts to actually feel like Fall here. Watch me.
Tropical Berry Smoothie Bowl
- 3/4 cup mixed berries
- 2 tablespoons passion fruit
- 3/4 cup canned coconut milk
- 1 scoop collagen peptides
- 1 ripe banana
- 2 tablespoons unsweetened coconut flakes
- 2 teaspoons chia seeds
- juice from 1/2 a lemon
- Combine all of the ingredients in a high-speed blender. Blend on medium-high for 45 seconds-1 minute until creamy and smooth.
- Top off with extra berries, passion fruit, coconut flakes and chia seeds.
- This will make ONE BIG smoothie bowl or TWO SMALL.
