Paleo Lemon Bars? Paleo Lemon Bars that are vegan, raw AND paleo- say WHAT? If you would have told me at some point in the past, that I would be creating raw desserts with ease and style, I would have laughed so hard. So, so hard. To be quite frank, after playing around with the textures that raw nuts bring to the table once mixed with dried and dehydrated fruit, the rest has come pretty easily. Nuts are so dang versatile. I have been doing a lot with raw cashews lately. Aside from playing a huge role in creating this lemon bars base, I have been filling cakes with raw cashew cream and throwing them into my afternoon pick-me-up smoothies.

So many of my friends and family members are huge lemon bar fans. Once I let my younger sister know I’d be making them, she asked if she could come over, help and then steal them home with her. Of course I wanted her to come over. Not only is she incredibly helpful in the cleaning department (no, she’s not) but she has quite the creative spirit raging inside of her, and she loves helping me with my recipes.

Oh, AND I have learned that I have quite the little professional photographer on my hands. I took ten minutes showing her how to operate my camera and immediately, she was snapping some drool-worthy shots. Can you believe that my first-time photographing 18-year old sister took these photos? I need to keep her around.

These Paleo Lemon Bars hardly made it to being photographed. We nearly ate them all while transferring them from one presentation tray to another.

Mixing bananas and lemons to make this Paleo Lemon Bars recipe may be one of the best ideas I have ever come up with. It wasn’t even intentional, at all. I was planning on strictly using extra coconut oil to thicken the topping, but then I realized I needed some lemons to incorporate into my photographs. I couldn’t use anymore in the bars, so I began raiding my refrigerator in desperation for a proper substitute. Luckily, I seemed to have a surplus of nanners in there, and I was ready to take the plunge. Who knew the result would be something so glorious, EASY TO MAKE and delicious?!

Paleo Lemon Bars


Ingredients
  • 3/4 cup raw cashews
  • 3/4 cup walnuts
  • 6 black dried figs
  • 12 dates
  • 1/2 cup unsweetened coconut flakes
  • a pinch sea salt
  • 2 bananas
  • 1/3 cup pure maple syrup
  • 1/2 cup coconut oil
  • 3 lemons juiced
  • 1 1/2 tablespoons lemon zest
  • 1/4 teaspoon dried turmeric
  • powdered unsweetened coconut flakes I ground them with my coffee grinder

Ingredients
  • 3/4 cup raw cashews
  • 3/4 cup walnuts
  • 6 black dried figs
  • 12 dates
  • 1/2 cup unsweetened coconut flakes
  • a pinch sea salt
  • 2 bananas
  • 1/3 cup pure maple syrup
  • 1/2 cup coconut oil
  • 3 lemons juiced
  • 1 1/2 tablespoons lemon zest
  • 1/4 teaspoon dried turmeric
  • powdered unsweetened coconut flakes I ground them with my coffee grinder

Instructions
  1. In a food processor, combine and pulse the nuts, dates, figs, coconut flakes, and sea salt until they form almost a paste like texture. You should be able to take your fingers and press the mixture against the side of the processor, as it holds together and looks like a "crust".
  2. Transfer this mixture to a square pan (8x8 or 9x11 works well) and press it down onto the bottom and slightly up the edges.
  3. Rinse the food processor and dry it.
  4. Now, pulse together the bananas, lemon juice, lemon zest, maple syrup, coconut oil and turmeric (this adds the lovely color!). The mixture will turn into a thick, milkshake like texture.
  5. Pour the mixture over the crust and cover the dish with some seran wrap or press n' seal. Let the bars set in the freezer for 24 hours. Then, when you are ready to eat the bars, cut into squares with a knife after running it under hot water.
  6. Top off with the powdered coconut flakes! Enjoy.
