Well, summer is officially here and this Grapefruit and Avocado Salad is the perfect indicator. The refreshing ingredients paired with their fat burning properties are the perfect way to kick off the hottest months of the year!

It’s been hotter than it should be here in Murrieta, California. We’ve been trying to escape to the coast as often as possible to get some cooler temps, but we’ve both been pretty slammed with plenty of work. That being said, I’m never TOO busy to whip up an insane salad recipe.

Did you know: 1 cup of avocado has 21 grams of healthy fats and 10 grams of dietary fiber? That’s a pretty powerful punch, if you ask me. Not to mention, all of the Vitamin A and C that can be found in grapefruit. These two ingredients are star of this salad, and the roasted cashews are some of the most memorable. There’s just something about the rich, butteriness brought to the table by the avocado and cashews when paired with the refreshing undertones of the cucumber, asparagus and grapefruit. Am I making you hungry yet? I’ve been working on my descriptive food vocabulary. The goal is to leave you salivating all over your keyboards. How am I doing?

What I love about summertime in the kitchen is keeping that stove and oven turned off as often as possible. With the help of delicious & nutritious salad making skills, that task becomes a lot easier. This Grapefruit and Avocado Salad is the perfect dish to bring to your next Summer BBQ or potluck. You’ll be sure to wow your guests with this highly innovative flavor combination. The salad is topped off with my recipe for homemade ranch dressing. The base of it is my homemade paleo mayonnaise, which makes it super creamy and dreamy. Just be sure to store the homemade ranch dressing in a separate container, to ensure the salad doesn’t become soggy.

This Grapefruit and Avocado Salad contains a lot of healthy fats in it. It’s very low carb, seeing as the cucumber discs are the base of the salad, and they’re primarily made up of water. That being said, I prefer eating this salad for breakfast with a side of extra protein to kick off my day the right way. The grapefruit tastes so refreshing in the morning and the healthy fats in the salad keep me feeling full until lunch time!

Instructions
  1. On a serving platter, arrange the cucumber discs across the bottom.
  2. Add grapefruit chunks, diced avocado and slivered asparagus. Top off with roasted cashews.
  3. In a glass jar, combine the dressing ingredients. Shake very well.
  4. Drizzle desired amount of ranch dressing over the top. Serve immediately.

    We have a grapefruit tree at our home in Oregon, magical fruit paired with cucumbers and lettuces. beautiful pictures!

    This salad looks so bright and beautiful! I don’t love grapefruit, but was thinking it looked as tantalizing as fresh tuna…maybe a replacement of fruit with tuna, and perhaps some toasted nori and toasted sesame seeds? Do you think that would go together well?
