Happy Tuesday everyone. I’m so excited to be sharing this easy to make and even easier to eat avocado aioli with you! It turns out that making aioli at home is one of the easiest things you can do. I shared a recipe for homemade mayonnaise in a curried chicken salad recipe post years ago! Since then, I’ve pretty much refused to buy mayonnaise anymore, considering how easy it is to make at home. Plus, you can create all kinds of delicious flavors by using fresh herbs and spices! Avocado aioli is probably my favorite flavor of aioli that I have tried thus far. There is so much healthy fat jammed into this delicious condiment!
Incoming: Avocado Aioli! I decided to add plenty of fresh garlic to the recipe in order to kick it up about 10 notches. I’ve kept this post incredibly short and sweet, since it’s pairing up with another recipe: Smashed Potatoes. I don’t want to ramble on too much here, so let’s get to it!
This recipe truly pairs perfectly with the Smashed Potatoes! You can use the leftovers of this aioli with and on top of so many different things. I like to use it with scrambled eggs and spread a dollop all over roasted vegetables- it is delicious!
- Add garlic into food processor and process until minced. Add the rest of the aioli ingredients and process until smooth, scraping down the bowl as needed. Add sea salt and pepper, to taste.
